Skewers
Ingredients
1/2 kg pork neck
80 g green tomatoes, peeled and chopped
80 g cucumber, peeled, chopped
75 g white onion, chopped
40 g green pepper, cut into cubes
1 garlic clove, grated
Salt to taste
Juice of 2 limes
15 drops green Tabasco
60 g extra virgin olive oil
5 tbsp maple syrup
80 g grilled pineapple, cut into cubes
A few leaves of coriander, chopped
preparation
Clean the pork neck, cut it into pieces and put it on the wooden skewer.
For the Pico de Gallo, mix the ingredients in a bowl and let marinate for about an hour.
Season the skewers with a little salt and pepper and ideally cook on a grill.
After cooking, serve with the Pico de Gallo.
