Pumpkin with Maple Syrup

Ingredients

For about 4 servings

800 g pumpkin, Hakkaido

2 tbsp rapeseed oil

2 tbsp maple syrup

1 tbsp rosemary, dried

1 tsp salt

2 tbsp pecans

180 g sour cream

Preparation

Preheat the oven to 180 degrees. Halve the pumpkin, remove the seeds and cut into 3 cm thick slices.

Mix the pumpkin slices with rapeseed oil, maple syrup, rosemary and salt. Place the marinated pumpkin on a baking tray lined with baking paper. Roughly chop the pecans and sprinkle on top 10 minutes before the end of baking.

Bake the pumpkin in the preheated oven for about 40 minutes. After 40 minutes, check the consistency with a fork. Remove and serve with the sour cream. A perfect side dish for almost any favorite dish.
