Brocoletti Salad with Maple Syrup
Ingredients
For about 4 servings
500 g broccoli
2 tbsp rapeseed oil
½ tsp salt
180g feta
30 g pecans
30 g cranberries
1 shallot
1 small can of chickpeas
½ bunch of parsley
2 tbsp balsamic vinegar
3 tbsp rapeseed oil
2 tbsp maple syrup
¼ tsp salt
¼ tsp pink pepper
preparation
Cut the brocoletti into small pieces. In a pan
Heat 2 tablespoons of rapeseed oil and fry the brocoletti for about 7 minutes. Season lightly with salt.
Finely chop the parsley. Peel and finely chop the shallot. Mix the shallot, parsley, balsamic vinegar, maple syrup, rapeseed oil, salt and pink pepper.
Rinse the chickpeas and drain. Crumble the feta. Roast the pecans in a pan without fat for 3 minutes.
Place the fried brocoletti on 4 plates. Sprinkle with feta, toasted pecans and cranberries and drizzle with the dressing.
